Because it’s cold outside, we conjure up a wonderfully wintry dessert for you. Try it out for yourself!
Ingredients for 4 people:
1 tablespoon raisins
1 tablespoon cranberries with pineapple juice
2 tablespoons rum (to taste)
70 g butter
4 apples (e.g. Boskop)
4 tbsp. honey
4 tbsp. walnuts
3 tbsp. ground pistachios
2-3 spsp. cinnamon powder
1 vanilla pod
¼ l milk
200g cream
1 level tbsp. cornstarch
2 egg yolks
60 g sugar
Soak the dried cranberries in a bowl of warm water. Pour the rum over the raisins in a small bowl and let them soak until needed. Preheat the oven to 180° (convection oven 160°).
For the sauce, slit the vanilla bean lengthwise, scrape out the pulp and add to the saucepan along with 200 ml milk and cream. Simmer uncovered over low heat for 5 minutes, stirring occasionally.
Meanwhile, mix starch with remaining milk, egg yolks and sugar in a small bowl with a whisk. Pour into saucepan while stirring and bring everything to a boil over medium heat. Remove from heat and let cool. Let the vanilla bean still steep in the sauce and remove only before serving.
Grease a small baking dish with 1 tablespoon of butter. Wash and dry the apples and cut off a lid from each. Hollow out the apples generously with a baller (or small spoon). Melt 1 tablespoon of butter. Brush the apples and lids with butter. Place the apples in the baking dish, add the de
