Indian Spinach Lentil Curry

From the Indian kitchen we have for you a great vegetarian dish with lots of delicious ingredients, very easy to recreate.

Ingredients for 3-4 people:

2 small cups of rice
300 g lentils
825 ml water
1/2 tsp salt
1/2 tsp turmeric
1/2 tsp chili powder
500 g fresh spinach
30 g butter
1 onion
1 tsp ground cumin seeds
1 tsp mustard seeds
1 tsp garam masala
1 tsp. peanut paste
125 ml coconut milk
2 tablespoons unsalted peanuts


Rinse lentils and soak for 20 minutes. Cook rice as usual.

Bring water to a boil in a large pot. Stir in lentils, salt, turmeric and chili powder. Bring everything to a boil, covered, turn down heat and simmer for 20 minutes until lentils are tender. Add more water if necessary.

Cut onion into medium sized cubes. In a saucepan, melt butter. Add the onions, cumin and mustard seeds to the pot and stir-fry. Once the onions are translucent, add the washed and chopped spinach. Continue stirring until the spinach is cooked down. Mix in the peanut paste and add the lentils to the pot. Stir in garam masala and coconut milk and let everything simmer briefly over medium heat.

Serve on cooked rice and sprinkled with peanuts.
