Rose water is an important ingredient in certain types of marzipan and is also used to flavor other dishes, especially in Arabic, Indian, Iranian and French cuisine.
In Iran, production is traditionally done by boiling the rose petals collected from May to June in copper kettles and collecting the steam, which is passed through a pipe system, into water-cooled copper pots from which the semi-solid rose oil is skimmed off.
